Spinach and Eggs Breakfast Salad

My kids’ still love protein pancakes for breakfast, but in the summer I like a more refreshing and cooling morning breakfast.  My breakfast still has to pack in the protein, however, or I’ll be hungry just a few hours later.  One of my favorite things to do is to hard-boil some eggs on a weekend, and then use them as snack items and/or quick meal items during the week.  These week I had some fabulous spinach on hand, so I quickly turned it into an incredibly delicious and satisfying breakfast.  Just slice the peeled hardboiled eggs on to a plate of freshly washed spinach, and add a bit of shredded parmesan or asiago cheese.  Lightly dress with olive oil and a pinch of salt, and your breakfast is ready.  Enjoy!
