Rice and Beans, Red and Green

To make this recipe dairy-free, omit the cheese.  Gluten-free/nut free.
  This recipe has become a family favorite for many of ours.  It’s easy, it’s tasty, and it combines rice and beans for a serving of complete protein. It’s also an example of how we put a dish together using Nurture’s Grain Recipe Frameworks: select a whole grain (in this case brown rice), select a protein (here it’s the rice/beans combination with a little extra help from a sprinkling of cheese), pick a vegetable or fruit (like the peas and green onions) and add seasonings (in this dish: salsa, cumin, chili powder, oregano and cilantro.) It’s simple to create the dishes your family loves when you put together the ingredients they like.
