LOVE! LOVE! LOVE! (Banana soft serve)

What do you do with your over-ripe bananas?  Toss them?  Make banana bread?  I had several over-ripe bananas and was searching the internet for inspiration.   I came across several recipes for one-ingredient ‘soft-serve’ that people were just raving about.  I was both intrigued and skeptical;  I like bananas, but really?  Soft-serve?!  Better than Pinkberry?!

I wanted to see what all the hype was about.  I quickly sliced my bananas into quarter-sized pieces and placed them in an airtight bag in the freezer.  Within a few hours, my bananas were frozen solid.  I placed the equivalent of one banana (slightly defrosted)  in my food processor.  One-ingredient soft serve did not seem sufficient so I threw in a tablespoon of almond butter and processed until smooth.

The result: the banana soft-serve is my new food crush!  I love it!  I have it as a post-workout snack or for dessert.  It is so delicious and easy to make!  You can substitute any nut butter of your choice (peanut butter is also very tasty)!

    We tried this with some frozen blueberries (instead of the nut butter) and it was a HUGE hit in our house! Refreshing and a real treat!

    Other variations:

    Pineapple and Macadamia Nuts
    Top with a few chunks of freshly sliced pineapple and chopped macadamia nuts.

    Strawberry Chocolate Chip
    Add 1 cup frozen chopped strawberries to the blender. When blended, stir in 1/2 cup dark chocolate chips (or carob chips, or cacao nibs).

    Cherries and Dark Chocolate
    Top with a couple spoonfuls of canned cherries and a sprinkling of chocolate chips or cacao nibs.

    Cinnamon Sunbutter
    Add 2 Tablespoons sunflower seed butter and 1 teaspoon ground cinnamon to the blender.

    Cinnamon Pecan
    Add 1 cup chopped pecans and 1 teaspoon cinnamon to the blender.

    Mango Peach
    Add 1/2 cup frozen chopped mango and 1/2 cup frozen chopped peach to the blender.

    Raspberry Almond
    Add 1 cup frozen raspberries to the blender. When blended, stir in 1/2 cup chopped almonds.

    Dark Chocolate Banana
    Add 2 tablespoons of dark chocolate sauce to the blender.

    Apple Pie
    Simmer chopped apples with cinnamon, cloves and nutmeg. Let thicken and cool, then pour over ice cream scoops.

    Strawberry Pistachio
    Add 1 cup frozen chopped strawberries to the blender. When blended, stir in 1/2 cup chopped roasted, unsalted pistachios.

    Blueberry Banana
    Add 1 cup frozen wild blueberries to the blender. Top with a sprinkling of chopped walnuts or almonds.
