March is National Nutrition Month. This year’s theme is “Eat right….With Color”. Is your plate full of vivacious colors? If not, chances are you need bulk up on your servings of fruit and veggies!
This is one of our ‘go to’ meals when I don’t have a lot of time to cook, but want to have a healthy meal at home. It is one of my husband’s favorite (I think it reminds him of Chipotle)!
Here is what you need:
-One cup of frozen corn
-One jar of salsa (I like Green Mountain)
-One Zucchini, quartered
-One Squash, quartered
-4 oz of cream cheese (cut into half inch cubes)
-One 15 oz can of no salt added black beans (rinsed)
Place all the ingredients in slow cooker* and cook on low for several hours.

Serve over a bed of mixed greens with sliced avocado and cheddar cheese for a fantastic fiesta salad— or —serve with brown rice (cook in your rice cooker*) for a quick and easy burrito bowl.
