Sweet Treats Recipes

Elena Cookies

These cookies are named after my daughter, who has been helping us to make them since she was about 9 months old.  They are a “sweet treat” (not necessarily nutritious), but they are certainly better than cookies you’d buy in a package!  I’m posting this recipe as so many people asked us over the holidays if we would share this recipe.  Here you go! Cookies 4 sticks of … [Read more...]

Dairy Free Avocado Coconut Chocolate Mousse

Elena continues her dairy free "personal journey", and we are making such good food that she is recruiting her friends to join her!  This recipe is a variation on a chocolate mousse recipe that she learned in her Food and Fun classes at Community School. We'd like to credit our friends at Glow Live Foods that inspired this recipe.  We modified the recipe only a little bit as we … [Read more...]

Dairy Free Chocolate Ice Cream

As part of Elena's dairy-free "personal journey", we needed to find a really good chocolate ice cream recipe.  Here's our new go-to! Ingredients: *3 cups non sweetened almond milk (we used Califia Farms Creamy Original) *6 egg yolks *3/4 cup sugar *1/3 cup cacao powder (we used Dagoba) *2 t vanilla *1/4 t xanthan gum Directions: Heat the almond milk and the cacao … [Read more...]

Flourless Chocolate Cake

For Elena's anniversary of her baptism, we make the cake decorating task into a fun and creative project. We found this photo for inspiration: Then we went to our greenhouse in search for something that would work. Chocolate chips mimic seeds in the middle of a flower, and we figured edible nasturtium petals and mint leaves would make a nice arrangement.  When … [Read more...]

Extreme Chocolate Pie

This recipe is one of my favorites given that I'm an extreme chocoholic.   It is so easy to make, too! First, you need to make the brownie bottom-- we use this recipe and pour some into a pie dish (and bake).  Once the brownie bottom has cooled, you make the top of the pie: -1 1/2 sticks of butter -1 cup sugar -6 oz bittersweet/semi sweet chocolate, melted and cooled -1 … [Read more...]

We make a huge batch of these brownies and freeze them for an amazing sweet treat!  We adapted an old recipe for the altitude by added a bit more flour and reducing the baking powder. 4 sticks butter 16 oz high quality bittersweet or semi-sweet chocolate 3 cups flour (we use ground whole wheat) 1 t baking powder 1 t salt 4 cups sugar (when we measure it out, we don't … [Read more...]

My daughter loves when I make crepes for breakfast (or lunch, or dinner)!  It is a treat, and we have a little "crepe bar" where she can roll up hers with yummy fruits, almond butter and of course whipped cream! All you need to make the crepe batter is: 1 cup flour 2 eggs 1/2 cup milk 1/4 cup water 2 T butter 1 t vanilla Optional: other spices like cinnamon Then you … [Read more...]

Chocolate Snack Cake

We could not live without this recipe on birthdays in our house.  You can frost it with buttercream frosting, jazz it up with chocolate ganache, or tone it down by adding nothing to the top except a sprinkle of powdered sugar. Ingredients: 3 cups flour (we split - 1.5 cups white and 1.5 whole grain flour) 2 cups sugar 2/3 cup unsweetened cocoa 2 teaspoons baking soda 1 … [Read more...]

Healthy Chocolate Mousse

We had another amazing Food and Fun lesson starring Lauri Bunting, who taught the middle school kids at Community School how DELICIOUS a raw vegan treat can be! Lauri provided the recipe and taught the kids something fun and interesting about each ingredient.    Here are a few fun facts about the main ingredient, avocados: Avocados originated in Mexico and Central … [Read more...]

No Bake Key Lime Pie

This post/recipe is inspired by the heat wave that is moving across the county.  Man--even in the mountains of Southern Idaho—it is HOT.  So I have been experimenting with some recipes that don’t require any added heat to the house.  Besides, I have been listening to my friends at Glow Life Food Cafe  in Ketchum about the amazing health benefits of a raw diet (Glow Life Food … [Read more...]
